Swiss Amish Meat Loaf

1 egg
1/2 cup evaporated milk
1/2 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 pounds lean ground beef
1 cup Ritz cracker crumbs
3/4 cup grated Swiss cheese
1/4 cup finely chopped onion
2-3 strips bacon, cut into 1-inch pieces

Preheat oven to 350 degrees F.

Beat the egg in a large bowl. Add evaporated milk, sage, salt and pepper, and mix. Add beef, crumbs, 1/2 cup of the cheese and the onion; blend. Form into a loaf and place in a 2-quart rectangular baking dish. Arrange bacon pieces on top of loaf. Bake 40 minutes.

Sprinkle remaining cheese on top and bake 10 minutes longer.

Soft Amish Chocolate Chip Cookies

1/2 cup shortening
1 cup granulated sugar
2 large eggs
1/2 cup milk
2 1/2 cups flour
1 teaspoon baking powder
3/4 teaspoons baking soda (place in the milk)
1 (12 ounce) bag chocolate chips or butterscotch chips

Cream shortening and sugar. Add eggs and milk with baking soda. Mix together and add baking powder. Gradually add flour and stir well. Stir in chocolate or butterscotch chips. Place dough by teaspoonsful on a greased cookie sheet. Bake at 400 degrees F until the edge is light brown.



tomato gravy

Tomato Gravy

4 cups tomato juice
2 tablespoons all-purpose flour
1 cup milk
Salt and pepper

Bring tomato juice to a boil. Mix together flour and milk. Add to boiling tomato juice. Bring to a boil again and remove from heat. Pour over cubed bread.

Tomato Fritters

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon granulated sugar
3/4 teaspoon salt
1/4 teaspoon dried basil
1 (28 ounce) can tomatoes, drained
1 tablespoon finely minced onion
1/2 teaspoon Worcestershire sauce
2 eggs
Vegetable oil for frying

In large bowl combine flour, baking powder, sugar, salt and basil. Cut tomatoes in 1/2-inch pieces and drain. Add them, along with onion, parsley and Worcestershire sauce to flour mixture, but do not mix.

In small bowl beat eggs and add to flour-tomato mixture. Blend lightly with fork. Heat 1/4 inch of oil in skillet over medium heat. Drop batter by tablespoon, patting down with back of spoon. Fry until golden brown on one side, then turn and fry other side. Keep fritters warm until serving time.

Makes 26 fritters or 4 to 6 servings.

Sour Cream Apple Pie

1 cup sour cream
1 egg
3/4 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
2 1/2 cups diced apples, peeled
1 unbaked 9-inch pie crust

Crumb Topping
1/2 cup brown sugar
1/4 cup butter
1/3 cup all-purpose flour
1 teaspoon cinnamon

Beat cream and egg together. Add flour, sugar, salt and vanilla extract. Mix until smooth. Stir in apples. Bake at 400 degrees F for 25 minutes. Remove from oven and spread with crumb topping. Bake 20 more minutes. Mix until crumbly.

Six Layer Casserole

2 cups raw hamburger
2 cups sliced raw potatoes
2 cups chopped celery
1/2 cup diced onions
2 teaspoons salt or less
1/4 teaspoon pepper
1 cup diced green pepper
Thin slices onions, optional
2 cups canned tomatoes

Grease a casserole dish. Sprinkle each layer with salt and pepper before adding the next layer. Place potatoes in the bottom of the casserole. Add the layer of celery. Add the layer of hamburger. Add the layer of onions. Add the green pepper. Pour the tomatoes over the mixture.

Bake for 2 hours at 350 degrees F.


rolled oats cake

Rolled Oats Cake

1 cup oats
1 1/4 cups boiling water
1/2 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Topping (use on warm cake):
5 tablespoons margarine
1/2 cup brown sugar
1/2 cup milk
1/2 cup coconut
1/2 cup chopped nuts

Mix oats and boiling water; let stand 20 minutes.

Cream together shortening, sugar, eggs, vanilla and add cooled oats with dry ingredients. Bake at 350 degrees for 35 minutes.

Topping: Boil margarine, brown sugar and milk for 7 minutes. Remove from heat, and stir in coconut and nuts.

Cake
2 cups all-purpose flour
1/2 cup cooking oil
2 eggs
2 teaspoons baking powder
1 cup granulated sugar

Filling
16 ounces cream cheese
3/4 cup granulated sugar
1 1/2 teaspoons flour
3 eggs
1 1/2 teaspoons vanilla extract
1 (13 ounce) can evaporated milk or 1 1/2 cups sweet milk
Cinnamon

Sift dry ingredients for cake. Add eggs, oil and sugar; stir well. Press into a 13 x 9-inch pan. Spread cake dough in bottom and on sides. Make filling.

Filling: Mix all filling ingredients together; beat until smooth. Pour filling into shell. Sprinkle with cinnamon and bake in 325 degree F oven for 1 1/4 to 1 1/2 hours.
