Egg Noodles
3 eggs
2 cups all-purpose flour (approximately)
1/2 teaspoon salt
Beef or chicken stock
Beat eggs until frothy. Add flour and stir until of dough texture. Knead until smooth. Turn into floured cutting board. Roll dough turning often until thin. Let noodle dough dry 45 minutes, then turn and dry another 1/2 hour.
Cut into noodles. Drop into boiling beef or chicken stock. Reduce heat and cook at rolling boil for about 20 minutes. As the noodles boil, begin their own gravy. Season to taste.
Chicken Casserole
8 ounces noodles, cooked
2 cups cooked chicken, cubed
2 cups chicken broth (can used canned)
1 cup milk
1 can mushrooms
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup margarine
1/3 cup flour
1/3 cup grated Parmesan cheese
Preheat oven to 350 degrees F.
Melt margarine, then add flour and stir until smooth. Gradually add milk and broth, then seasonings and mushrooms. Combine chicken, cooked noodles and prepared sauce. Put into an ungreased 13 x 9-inch baking pan and top with Parmesan cheese. Bake, uncovered, for 30 minutes.
Browned Stew with Dumplings
This is an old Amish Mennonite recipe.
2 pounds cubed beef
2 tablespoons all-purpose flour
3 tablespoons fat (or vegetable oil)
1 small onion, chopped
1 1/2 teaspoons salt
1/8 teaspoon pepper
4 cups boiling water
1 teaspoon lemon juice
Cut meat into small cubes.
Melt fat in a hot skillet or Dutch oven. Brown meat and onion in fat, keep it sizzling hot until nicely browned.
Sprinkle flour, salt and pepper over meat. Add the boiling water and lemon juice. Cover the pan and lower the heat so that meat simmers for 3 to 3 1/2 hours.
Dumplings
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
2 to 3 tablespoons milk
1 tablespoon solid shortening
Stir quickly together and drop from a spoon onto simmering stew. Cover and allow to cook 12 to 25 minutes.
Banana Cake
1/2 cup butter
2 cups all-purpose flour, sifted
1 cup sour milk
1 teaspoon vanilla extract
1 1/2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
2 bananas, creamed
2 eggs, beaten
Cream butter and sugar together. Add well beaten eggs. To this mixture, add the sour milk alternately with the sifted flour, baking powder and the baking soda. Add creamed bananas and vanilla extract. Beat with an egg beater. Grease and flour a pan and bake cake at 350 degrees F for about 40 minutes. Cool before removing from pan.
Apple Salad
1 cup granulated sugar
1 cup water
2 tablespoons all-purpose flour
1 tablespoon vinegar
1 tablespoon butter
2 eggs
4 to 6 cups sliced apples
Mix all ingredients except apples in saucepan, cook until thick. Pour over apples. Serve warm or cold.
Apple Nut Cake
1 1/4 cups oil
2 cups granulated sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons vanilla extract
3 cups cubed, peeled apples
1 cup chopped nuts
Topping
1/2 cup (1 stick) butter
1/4 cup evaporated milk
1 cup brown sugar, firmly packed
Mix together well oil, sugar and eggs. Add remaining cake ingredients and mix well again. Pour into greased 13 x 9-inch pan and bake at 350 degrees F for 45 to 55 minutes, starting in a cold oven.
Mix together topping ingredients in a saucepan and bring to a boil. Pour on cake while still cake is still warm.
Blueberry Cake
3/4 cup granulated sugar
1/4 cup vegetable oil
1 egg
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries, well drained
Preheat oven to 375 degrees F.
Cream together sugar, oil and egg until lemon colored. Stir in milk.
Sift together flour, baking powder and salt and stir into creamed mixture. Gently fold in blueberries. Spread batter into greased and floured 9-inch square pan. Sprinkle with Topping. Bake for 45 to 50 minutes.
Topping
1/4 cup butter
1/2 cup granulated sugar
1/3 cup flour
1/2 teaspoon cinnamon
Combine with fork or pastry cutter. Crumble over cake batter.
Amish Barbecue Chops
8 pork chops
1 cup catsup
1 can celery soup
1/2 cup chopped onion
1 or 2 tablespoons Worcestershire sauce
Preheat oven to 275 degrees F.
Mix catsup, celery soup, chopped onion and Worcestershire sauce together and pour over the pork chops in a buttered casserole dish. Bake for 2 hours.
